Pesto Shrimp with Mushrooms

Recipe:

Ingredients

1 tablespoon olive oil

1 pound shrimp , peeled, deveined

¼ teaspoon salt

¼ teaspoon red pepper flakes

1 tablespoon olive oil

8 ounces white mushrooms , sliced

3 cloves garlic , minced

½ cup basil pesto

½ cup chicken broth

1 tablespoon fresh basil , chopped

Instructions

Heat large skillet on medium-high heat until hot. Add olive oil - it should run without sizzling. Add shrimp, season shrimp with ¼ teaspoon salt and ¼ teaspoon red pepper flakes, cook for about 3 minutes, turning once midway, until shrimp is pink and cooked through. Remove shrimp from the skillet.

Add another tablespoon of olive oil to the same, now empty, skillet. Add sliced mushrooms. Add minced garlic. Season mushrooms with salt (to taste). Cook, stirring, until mushrooms release liquid and reduce in volume and get soft, for about a minute or two. Add back the cooked shrimp. Add ½ cup basil pesto and ½ cup chicken broth. On medium heat, mix everything to combine. Remove from heat.

When ready to serve, top the shrimp with chopped fresh basil.

Tips

1. Choose Fresh Ingredients

- Use fresh, high-quality shrimp for the best taste and texture. If using frozen shrimp, make sure to thaw them properly before cooking.

- Opt for fresh mushrooms like cremini, button, or shiitake for a deep, earthy flavor.

- If possible, use homemade basil pesto for a fresher and more vibrant taste. Store-bought pesto works well too if you're short on time.

2. Don’t Overcook the Shrimp

- Shrimp cook very quickly, usually in 2-3 minutes per side. Overcooking can make them rubbery, so keep a close eye on them while cooking.

3. Sauté Mushrooms Properly

- Cook mushrooms over medium-high heat to allow them to release their moisture and develop a golden-brown color. Avoid overcrowding the pan, as this can cause the mushrooms to steam instead of sauté.

4. Add Pesto at the End

- Pesto should be added at the very end of cooking to preserve its fresh flavor and vibrant green color. Heating pesto for too long can cause it to lose its brightness.

5. Pair with the Right Sides

- Serve this dish over pasta, rice, or zucchini noodles for a complete meal. You can also enjoy it on its own for a low-carb option.

FAQs

1. Can I use a different type of seafood?

Yes, you can substitute shrimp with scallops, chicken, or even tofu for a vegetarian option. Adjust the cooking time accordingly to ensure the protein is cooked through.

2. What type of mushrooms work best for this recipe?

Cremini, button, or shiitake mushrooms are excellent choices. Each type brings a slightly different flavor profile, so feel free to experiment with your favorite variety.

3. Can I make this dish dairy-free?

Yes! Use a dairy-free pesto (made without Parmesan cheese) or make your own pesto using nutritional yeast as a substitute for cheese.

4. How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat to avoid overcooking the shrimp.

5. Can I make this dish ahead of time?

While it’s best served fresh, you can prepare the sautéed mushrooms and pesto sauce ahead of time. Cook the shrimp just before serving to ensure they remain tender and juicy.
